Yellow, yellow, yellow is all I have. The characteristic golden yellow
of turmeric (Curcuma longa), also called turmeric, brings the sun into
every dish. Its woody-floral aroma should not be missing from any curry
and goes perfectly with rice dishes, stews or lentils. But
spinach, melanzani, chicken and fish also benefit enormously. If you want to
intensify the flavour, lather the spice in vegetable oil or ghee before adding it
in vegetable oil or ghee. Experimenting with turmeric is allowed!
