Garam masala is a typical North Indian spice speciality that has a firm place in Ayurvedic cuisine. Garam Masala means "mixture of warming spices" (as opposed to cooling herbs/spices, because there are those too...).

Garam masala is only added to the dish at the end and used for seasoning. When dosed 'delicately', the dish takes on a sweet note that is distantly reminiscent of coconut. At higher doses, the spiciness becomes more pronounced and the variety of spices emerges, including the indispensable note of cumin and a warm note of baked bread from the pre-roasting.
