The leaves of the Indian curry tree are an important spice in vegetarian South Indian and Sri Lankan cuisine. Because of their spicy, fresh aroma, they are often used for rice, dal and other vegetarian dishes.
Curry leaves stimulate the appetite and, according to Ayurveda, promote digestion (strengthen Agni).
